Allyl isothiocyanate is an organic sulfur compound. Allyl isothiocyanate is a colorless oil. The pungent taste of mustard, radish, horseradish and mustard comes from this compound. This pungent taste and tear inducing effect are mediated by TRPA1 and TRPV1 ion channels. Allyl isothiocyanate is slightly soluble in water, but easily soluble in most organic solvents.
