The appearance of dipotassium hydrogen phosphate is colorless flake or acicular crystal or white particles, deliquescence, easy to dissolve in water (1g dissolved in 3ml water), water solution is weakly alkaline, insoluble in ethanol, after burning to form potassium pyrophosphate. Dipotassium hydrogen phosphate is mainly used as analytical reagent, pharmaceutical raw material, buffer, chelating agent, yeast food, emulsified salt and antioxidant synergist in food industry. China's "Hygienic standard for the use of food additives" (GB2760-1996) stipulates that it can be used for vegetable fat powder, and the maximum dosage is 19.9g/kg.
