Properties: Similar to white or light yellow powder, odorless. It has a special sweetness (the sweetness of monopotassium glycyrrhizate is about 500 times that of sucrose), the sweetness lasts for a long time, easily soluble in water, soluble in dilute ethanol, glycerol, propylene glycol, slightly soluble in absolute ethanol and ether .
The preparation method uses natural licorice as raw material, extracts with water and then adds potassium alkali for partial neutralization to obtain monopotassium glycyrrhizate.
Identification method This product exhibits glycyrrhizic acid reaction and potassium ion reaction.
1. Glycyrrhizic acid reaction Take 0.5~1mg of this product, add 0.5mL of ethanol to dissolve it, add 1~2mL of 0.5% vanillin sulfuric acid solution, the solution turns yellow and gradually turns purple, add about 2mL of water to produce a blue floc.

Toxicological basis: LD50 mice orally more than 10g/kg body weight.

China's "Hygienic Standard for the Use of Food Additives" (GB 2920-1996) stipulates that it can be used in canned meat, seasonings, candies, biscuits, candied fruit, preserved fruits, juice (flavored) beverages in an appropriate amount according to production needs.
