Phytosterol ester is generally prepared by esterification of phytosterols and fatty acids. In order to facilitate its application in food processing, it is required to change the form of phytosterol without affecting the physiological function of phytosterol. Phytosterol ester meets this requirement. It greatly improves the fat solubility of phytosterol, so it can be added to oily food.
