D-mannose is divided into α- Type and β- There are two types. Α- The melting point is 133 ℃; β- The melting point is 132 ℃ (decomposition point). It tastes sweet with a slightly bitter aftertaste. Soluble in water, insoluble in ethanol, insoluble in ether. In plants, it mainly exists in the form of condensation in mannan and other polysaccharides.
