ε-polylysine
ε-Polylysine is known for its safety , effectiveness and natual origin in food industry to prolong the shelf-life and retain food quality. It is derived from the fermentation of streptolyces and composed of 25 to 30 lysine residues. After consumption, it can be digested by the body to become the molecules of lysine - the amino acid required by the body without any side effects. Also unlike other natural bioperservertives, εPolylysinehas a wide antimicrobial spectrum against both gram positive bacteria and gram negative bacteria. It has inhibitory effects on yeast and molds in acidic and slightly acidic environments.
Mechanisn
Studies have shown that ε-polylysine has effects on the respiration of bacteria whenε-polylysine binds to ribosomes to inhibit protein and enzyme synthesis. Because the cell membrane is one of the main sites for microbial energy conversion and substance metabolism, ε_polylysine's attachment on the cell membrane can destroy the integrity of the membrane structure and make the cell membrane lose its selectivity for substances. This causes the intracellular lysosomal membrane to rupture and induces microbial autolysis, which ultimately leads cell death.

Usage
It is recommended to mix the product into 5 10% solution with cold sterilized water, and then add mixture into food based on the requirements for full mixing. The method of grading expansion should be adopted to achieve the uniform mixing. Recommended usage: 0.2-0.5g/kg
