English name: Xanthan gum
CAS number: 11138-66-2
Appearance: Xanthan gum is a light yellow to white flowable powder with a slight odor.
Physical properties: Xanthan gum is easily soluble in cold and hot water, neutral in solution, resistant to freezing and thawing, and insoluble in ethanol. Disperse and emulsify in water to form a stable hydrophilic viscous colloid. Its aqueous solution has high viscosity and good stability under conditions such as heat, acidity, alkalinity, and salt.
Chemical structure: Xanthan gum is a monospore polysaccharide produced by fermentation of Pseudomonas aeruginosa. Its molecular structure is complex, including a glucose main chain connected by β -1,4-glycosidic bonds and components such as mannose and glucuronic acid on the side chain. There may also be groups such as pyruvic acid on the side chain.
Uses
Due to its unique rheological properties and stability, xanthan gum has a wide range of applications in multiple fields:
- Food industry: As a thickener, suspending agent, emulsifier, and stabilizer, it is widely used in fruit juice beverages, ice cream, frozen desserts, baked goods, gels, soft drinks, salad dressings, instant noodles, sausages, canned meat, cheese and other foods. It can improve the taste, texture, and stability of food, such as making ice cream more porous, ice free, and making jelly easier to form.
- Medicine: Xanthan gum is used as a setting agent, suspension agent, and moisturizing agent, with thickening, adhesion, and lubrication effects.
- Cosmetics: Xanthan gum is used as a thickener and stabilizer to improve the texture and stability of products. At the same time, due to its antioxidant and moisturizing properties, it is also used in high-end cosmetics.
- Petroleum industry: Xanthan gum is used as a stabilizer for drilling mud. Due to its strong pseudoplasticity, it can maintain the viscosity of drilling fluid at low concentrations and control its rheological properties, thereby improving drilling efficiency.
- Agriculture: Xanthan gum can be used as a suspension agent for pesticides to improve their stability and effectiveness.
- In the field of feed, xanthan gum is used as a binder for fish and shrimp seedling feed.
- Other applications: Xanthan gum can also be used in daily chemical, textile printing and dyeing, paper industry and other fields as a thickener, stabilizer and emulsifier.

Xanthan gum, also known as xanthan gum and Hansen gum, is an extracellular acidic heteropolysaccharide produced by fermentation of Xanthomonas. D-glucose, D-mannose and D-glucuronic acid are high molecular weight polysaccharides with a ratio of 2:2:1. The secondary structure of xanthan gum is that the side chain is reversely wound around the backbone of the main chain, and the rod like double helix structure is formed by hydrogen bonding. Xanthan gum is a light yellow to white flowable powder with a slight odor. It is soluble in cold and hot water, neutral, resistant to freezing and thawing, insoluble in ethanol. When it meets with water, it disperses and emulsifies into a stable hydrophilic viscous colloid. Xanthan gum is a kind of biological gum which integrates thickening, suspension, emulsification and stabilization, and has the best performance in the world, so it is widely used in more than ten fields such as food, petroleum, medicine and daily chemical industry. In food: many foods are added xanthan gum as stabilizer, emulsifier, suspending agent, thickener and processing aid. In daily chemical industry: Xanthan gum contains a large number of hydrophilic groups, which is a good surfactant, and has antioxidant, anti-aging and other effects. In medicine: Xanthan gum is a functional component of microcapsule material which is popular in the world and plays an important role in controlling drug release. In petroleum industry, because of its excellent salt resistance and heat resistance, it is widely used in drilling in special environment such as ocean and high salt zone, and can be used as oil displacement agent to reduce dead oil area and improve oil recovery.
