Erythritol is a filling sweetener, which is a tetra-carbon sugar alcohol with the formula C4H1004. Erythritol is widely found in nature, such as fungi, mushrooms, lichens, melons, grapes, pears, and small amounts of animal eyeball crystals, plasma, fetal fluid, semen and urine. In fermented food wine, beer, soy sauce, Japanese sake also exist in a small amount. It can be prepared by glucose fermentation, and it is a white crystalline powder, which has a refreshing sweetness, is not easy to absorb moisture, is stable at high temperature, and is stable in a wide PH range, when dissolved in the mouth has a gentle cool feeling, suitable for a variety of food.
Main properties:
• Low sweetness: the sweetness of erythritol is only 60%-70% of sucrose,the entrance has a cool taste, pure taste, no bitter feeling, can be used with high sweetener compound can inhibit the bad flavor of high sweetener.
• High stability: very stable to acid, heat, acid and alkali resistance are very high, in 200 degrees below the temperature will not occur decomposition and change, will not occur maillard reaction and discoloration.
