Coconut aldehyde γ- Nonolactone is a colorless or slightly yellow transparent oily liquid with sweet coconut aroma and peach and apricot flavor when diluted. Nonenoic acid was prepared by the reaction of heptanaldehyde and malonic acid, stirred with 85% sulfuric acid, washed and distilled under reduced pressure.
