Brief Introduction
Maize germ is one of the components of plants, which is connected with the hypocotyl. Located at the top of the hypocotyl, it breaks through the seed skin and develops into leaves and stems. Maize germ is the most nutritious part of maize kernel and the starting point of maize growth and development. Although its weight only accounts for 11% ~ 14% of the corn kernel, the corn germ contains a lot of nutrients such as protein, fat and vitamins. The protein content is about 15%, the fat is about 45% (85% of which are unsaturated fatty acids dominated by oleic acid and linoleic acid), and about 8% of dietary fiber.
